How is menu price calculated from food cost %?
Divide your food cost by your target food cost percentage, expressed as a decimal. A £7.50 dish at a 30% target works out to £7.50 / 0.30 = £25.00.
What target food cost % should I use?
Most full-service restaurants target roughly 28-35%, though this varies a lot by cuisine and format. Seafood-led dishes often run higher on raw ingredient cost than other cuisines, so some owners set a slightly higher target for those specific dishes.
