What is menu engineering?
A real, established foodservice-management method (first published by Kasavana and Smith in 1982) that classifies each dish by its profit margin and how popular it is, so you know which dishes to protect, promote, fix or drop.
Why do I need to enter units sold?
Popularity is one whole axis of this method, without a real units-sold figure there's no way to honestly tell a popular dish from an overlooked one, so it's required, not optional.
What should I actually do with each quadrant?
Stars are worth protecting as-is, Puzzles are worth promoting more, Plow Horses can often take a small price rise, and Dogs are worth reconsidering or dropping, see the notes under your results.
